Carrot Cake

Ingredients

  • 2 C sugar
  • 3 eggs
  • 3/4 vegetable oil
  • 1 t vanilla
  • 3/4 C sour cream
  • 2 t baking soda
  • 2 t cinnamon
  • 1 1/2 t salt
  • 1 - 20 oz. crushed pineapple, juice and all
  • 2 C chopped walnuts
  • 2 1/2 C flour
  • 2 C grated carrots - packed down

Preparation

Step 1

Beat sugar, eggs, oil and vanilla together in large bowl. Mix in sour cream. Add baking soda, cinnamon and salt. Add pineapple with liquis and nuts. Mix thoroughly.

Add flour gradually. Mix in grated carrots by hand.

Spread in 9 x 13 greased pan and bake for 50 minutes.

Cream Cheese Frosting
1/2 C butter
8 oz. cream cheese
1 t vanilla
4 C powdered sugar

Mix softened butter with softened cream cheese and vanilla til smooth. Add powdered sugar slowly.
