Carrot Cake Cookies

Ingredients

  • 1 C butter - room temperature
  • 2 C sugar
  • 3 beaten eggs
  • 1 C unsweetened apple sauce
  • 2 t vanilla
  • 1 t baking powder
  • 1 t baking soda
  • 4 t cinnamon
  • 1/2 t nutmeg
  • 1 t salt
  • 20 oz. crushed pineapple - well drained
  • 1 C golden raisins
  • 1 C chopped walnuts
  • 3 1/2 C flour
  • 1 C choped coconut
  • 3 C finely grated carrots

Preparation

Step 1

Use parchment paper. Rinse cookie scoop after every 4 or 5 scoops.

Beat butter, sugar and eggs well. Make sure applesauce is well drained. Pat with paper towel. Add vanilla, soda, baking powder, cinnamon, nutmeg and salt. Mix well. Add pineapple, raisins and walnuts. Blend in flour a little at a time. Add coconut and carrots by hand.

Dough will be very thick and sticky. Cover with plastic and chill for 2 hours or overnight.

Preheat oven to 350 degrees. Each cookie should contain about 2 T of dough. Bake 12 minutes.

Top with cream cheese frosting.
