Green Beans With Onion

  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon butter
  • 1 small onion chopped
  • 1 cup chicken broth
  • 1 pound trimmed green beans - (to 1 1/4 lbs) (many markets have trimmed raw beans in
  • packages in the fresh produce department in 1-lb packages)
  • Salt to taste

Preparation

Step 1

To a medium pan over medium heat add extra-virgin olive oil and butter and onion. Saute onion 3 minutes, add broth and bring to a boil. Add beans, season with salt and cover pan and simmer 8 minutes, until tender.

This recipe yields 4 servings.
