Jicama Pomegranate Salad

Ingredients

  • 3 C julienned jicama slices
  • 1/2 C pomegranate arils
  • 1/3 C vertically sliced red onion
  • 1/4 C chopped cilantro
  • 1/4 C lime juice
  • 2 T olive oil
  • 1 T agave nectar
  • Salt & pepper.

Preparation

Step 1

Mix vegetables in serving bowl. In small bowl combine dressing ingredients, stirring with a whisk until well blended. Pour over jicama salad, toss gently & serve.
