Mediterranean Lentils and Rice

Ingredients

  • 1 tablespoon olive oil
  • 1 1/2 cups chopped onion
  • 5 cloves garlic, pressed
  • 1 cup dried lentils
  • 1 cup brown rice
  • 1 (14.5-oz.) can diced tomatoes
  • 1/2 cup chopped Kalamata olives
  • 1/2 teaspoon salt
  • 4 cups water
  • 1/4 cup chopped fresh basil leaves
  • 2/3 cup crumbled Feta cheese

Preparation

Step 1

Heat the oil in a medium saucepan over medium heat; add onion and garlic and saute for 5 minutes or until tender. Add lentils and next 5 ingredients (lentils through water). Bring to a boil then reduce heat, cover, and simmer for 50 minutes or until rice is tender and liquid is absorbed. Spoon into individual bowls and sprinkle evenly with basil and cheese.
