Ingredients
- 2 cups black beans, cooked, cooled, and rinsed
- 1 cup loosely packed raw spinach, roughly chopped
- 1 cup roasted bell pepper, chopped
- 1/2 cup red onion, chopped
- 1 cup cooked corn
- 1 cup roasted squash, sliced (kabucha?)
- 1 tablespoon minced serrano pepper (optional)
- 1/3 cup extra virgin olive oil
- 3 tablespoons lime juice
- 1/2 cup aged gouda, crumbled
- 1/2 cup toasted pumpkin seeds
Preparation
Step 1
Gently toss beans with vegetables and olive oil, toss in lime juice and check for season, adjusting lime and salt to taste. Spread on platter, scatter on gouda cheese and pumpkin seeds. Drizzle with olive oil and serve at room temperature.
