Soy Glazed Bok Choy

Ingredients

  • 1 lb. bok choy
  • water for cooking, divided
  • 1/4 cup light soy sauce
  • 1 tsp rice wine vinegar
  • 1 tsp peanut oil
  • 1 tsp. minced ginger
  • 1 tsp. cornstarch

Preparation

Step 1

1-Trim the ends off the bok choy and slice in half, lengthwise. Place in steamer basket.

2-Place 1/2 cup water in the pressure cooker, add steamer basket. Close and lock lid.

3-Cook for 1 minute on high pressure.

4-Remove the steamer basket and drain water. Add soy sauce, rice wine vinegar, oil and ginger to the pressure cooker, bring to heat, uncovered, use brown setting.

5-Combine cornstarch with 2 tsp of water and slowly add to pressure cooker, stirring constantly.

6-Add bok choy and stir until coated.
