Chicken with Squash & Peppers

Ingredients

  • 1.5 - 2 lbs boneless skinless chicken tenders (or breast)
  • 14 oz can diced tomatoes
  • 2 bell peppers, seeded and sliced
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1/2 red onion, chopped
  • 2 T. Veggie Bombay seasoning
  • 2 t. oregano
  • 3 cloves garlic, minced
  • pinch of sea salt
  • pinch of pepper

Preparation

Step 1

Place all ingredients in a crockpot and cook on low for 4-5 hours.
