Zucchini Bread

Ingredients

  • 4 cups zucchini, coarsely shredded
  • 3 cups flour
  • 2 1/2 cups sugar
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons baking soda
  • 1 to 1 1/4 cups vegetable oil
  • 4 eggs, beaten
  • 1 tbsp plus 1 tsp vanilla
  • 1 tablespoon cinnamon
  • 1/2 teaspoon baking powder

Preparation

Step 1

Blend on low speed 1 minute then medium speed 1 minute with a hand mixer. Pour into 2 loaf pans greased on bottom only. Bake until toothpick comes out clean. Cool 10 min.
