Beef and Broccoli Stir Fry

Ingredients

  • 2 c Minute Brown rice, uncooked
  • 1 lb beef flank steak, cut into strips
  • 2 t cornstarch
  • 1/4 c orange juice
  • 1 t ground ginger
  • 1 T vegetable oil
  • 1 pkg (10oz)frozen broccoli florets, thawed
  • 1 can (8oz)sliced water chestnuts, drained
  • 1/4 c reduced sodium soy sauce
  • 1/4 c dry roasted peanuts (optional)

Preparation

Step 1

Prepare rice according to package.

Place steak strips in med bowl and sprinkle with cornstarch; toss to coat. Add orange juice and ginger and stir until well blended.

Heat oil in large nonstick skillet over med high heat. Add steak mixture; stri fry 4-5 min or until steak is cooked through. Reduce heat to med low.

Add broccoli, water chestnuts and soy sauce; mix well. Cover; simmer 5 minutes or until thickened, stirring frequently. Serve over rice and sprinkle with peanuts if desired.
