Ingredients
- 2 c Minute Brown rice, uncooked
- 1 lb beef flank steak, cut into strips
- 2 t cornstarch
- 1/4 c orange juice
- 1 t ground ginger
- 1 T vegetable oil
- 1 pkg (10oz)frozen broccoli florets, thawed
- 1 can (8oz)sliced water chestnuts, drained
- 1/4 c reduced sodium soy sauce
- 1/4 c dry roasted peanuts (optional)
Preparation
Step 1
Prepare rice according to package.
Place steak strips in med bowl and sprinkle with cornstarch; toss to coat. Add orange juice and ginger and stir until well blended.
Heat oil in large nonstick skillet over med high heat. Add steak mixture; stri fry 4-5 min or until steak is cooked through. Reduce heat to med low.
Add broccoli, water chestnuts and soy sauce; mix well. Cover; simmer 5 minutes or until thickened, stirring frequently. Serve over rice and sprinkle with peanuts if desired.
