Roasted Red Pepper Sauce over Pasta

Ingredients

  • 16 oz. roasted red peppers - drained
  • 1 small onion chopped
  • 1-2 T. olive oil
  • 2-3 cloves of garlic chopped
  • 1 cup of chicken stock
  • 1 cup feta cheese
  • Pasta of your choice

Preparation

Step 1

1. Heat olive oil and sautee onions and garlic.

2. After onions and garlic are soft, add red peppers. Sautee slowly(about 5 minutes).

3. Add red pepper mixture to a food processor. Slowly process and add chicken stock slowly. Add feta cheese and mix well. Add salt and pepper to taste.

4. Cook pasta - reserve about 1 cup of pasta water.

5. Transfer red pepper pasta back to sautee pan. Gradually add pasta to sauce. Mix well. Add a little of pasta water if needed to mix all well together.

Note: you can add sautee vegetables or sautee chicken to this dish for variation.
