French Garlic Chicken

Ingredients

  • 9 large garlic cloves, peeled
  • 4 tablespoons fresh lemon
  • 4 chicken breasts, boned & skinned
  • 3 tablespoons butter or margarine
  • 1 tablespoon cooking oil
  • 1 cup mushrooms, slice
  • 3/4 cup dry white wine
  • 1 tablespoon salt
  • 1 bay leaf
  • 3/4 cup chicken broth
  • 1 1/2 1 1/2 teaspoon Dijon-style mustard
  • 1 tablespoon parsley, chopped

Preparation

Step 1

Finely mince 4 cloves garlic in small dish with lemon juice. Rub chicken with mixture. Let stand 10 min. Meanwhile melt butter and oil over medium heat in large skillet and add chicken. Sauté 12 to 15 min., turning once. Add mushrooms, wine, salt, bay leaf and remaining garlic. Cover and cook 10 to 12 min. Blend mustard and broth and add, cooking, covered, for 10-15 min. more or until chicken is tender.Remove chicken and whole garlic cloves to platter and keep warm. Discard bay leaf. Bring pan liquids to a boil and cook rapidly to reduce and thicken slightly. Pour liquids over chicken & sprinkle with parsley.
