Ingredients
- 1 1/2 lbs small red skinned potatoes, cut into 1/2 inch thick slices
- 3 Tbsp olive oil
- 1/2 cup parmesan cheese
- 1/4 cup each dry bread crumbs and minced fresh parsley
Preparation
Step 1
Preheat oven to 375 with a baking sheet inside.
Toss potatoes with oil in a bowl. Combine parsley, breadcrumbs and parmesan; toss mixture gently with potatoes until coated. Arrange potatoes on preheated baking sheet. Bake until potatoes are tender, about 30-35 minutes.
