Lemon Chicken

Ingredients

  • 1 lb. boneless chicken breast
  • 1/4 c. sifted flour
  • 1/4 tsp. pepper
  • 1/4 c. lemon juice
  • 1/4 c. butter
  • 1 tsp. salt
  • 8 oz. sliced mushrooms (canned works well)
  • hot, cooked rice optional (preferably chicken-flavored)

Preparation

Step 1

In a plastic bag, combine flour, salt and pepper. Add chicken and shake to coat. In a large pan, brown chicken in butter. Lower flame before adding lemon juice and mushrooms. Cover and simmer 20 minutes. Serve over rice.
