Oven-Roasted Tomatoes

Simple recipe, maximum flavour.

Ingredients

  • 6 roma tomatoes, cut in half lengthwise
  • 12 teaspoons extra virgin olive oil (1 teaspoon per tomato half)
  • fresh chopped thyme
  • coarse salt

Preparation

Step 1

1. Preheat oven to 250 F.
2. Lay roma tomato halves flesh-side up on a cooling rack.
3. Place rack on a baking sheet lined with parchment paper.
4. Drizzle each tomato half with 1 teaspoon extra virgin olive oil and sprinkle with fresh chopped thyme and coarse salt.
5. Bake for approximately 2-1/2 hours. Remove from oven. The tomatoes will begin to pucker, but will still be moist.
