Lemon Squares

Ingredients

  • Crust:
  • 1 C butter
  • 2 C flour
  • 1/2 c sugar
  • pinch salt
  • Lemon Curd:
  • 4 eggs
  • 1/3 C lemon juice
  • 1 tsp lemon zest
  • 2 C sugar
  • 1/4 C flour
  • 1 tsp baking powder
  • Powdered sugar for garnish

Preparation

Step 1

Pre heat oven to 350
Mix all crust ingredients in food processor until combined.
Press into a parchment lined 9 x 13 pan and bake 20 min.

Mix lemon curd ingredients together in food processor, then pour onto baked crust and bake for 20 - 25 min.

Allow to cool, then sprinkle liberally with powdered sugar.

Cut into 2" squares
