Lemon Chicken

Ingredients

  • 3 chicken breasts, boned and skinned
  • 1 tablespoon vodka
  • 1/2 teaspoon sesame oil
  • 1 egg white, lightly beaten
  • 3/4 cup sugar
  • 1 tablespoon cornstarch
  • 1/2 cup white vinegar
  • 1 lemon rind, grated
  • 1 lemon, juice only
  • 1/4 cup chicken broth
  • 1 carrot, grated
  • 1 green onion
  • 1/4 cup green pepper, in thin strips
  • 1/4 cup pineapple chunks, drained and cut in half
  • oil
  • 1/2 teaspoon lemon extract

Preparation

Step 1

Combine vodka, sesame oil and egg white in bowl. Add chicken. Set aside

In saucepan- sugar, cornstarch, vinegar, rind and lemon juice and extract. Boil. Add broth. Boil

Put carrots, green onion and green pepper in container.

Heat oil. Dip breasts in flour. Cook 10 minutes each side. (til crisp) After cools, cut into chunks.

When heating sauce to serve, add vegetables.
