Country Ham-Wrapped Peaches with Goat Cheese Sauce

Ingredients

  • 1 T vegetable oil
  • 2 large, ripe peaches
  • 16 slices country ham or prosciutto (each 3"x2" and a thin as you can get it)
  • 1/2 C (3 oz) fresh goat cheese
  • 1/2 C buttermilk
  • 1/4 t kosher salt
  • 1/4 t cayenne pepper
  • 3 T balsamic vinegar

Preparation

Step 1

Preheat oven to 500 degrees. Drizzle a baking sheet with vegetable oil, heat in oven, and remove it just before oil is smoking, about 15 minutes. Meanwhile, cut each peach into 8 wedges. Wrap each wedge with a slice of ham.

In a blender, puree goat cheese, buttermilk, salt, and cayenne until smooth.

Carefully place wrapped peaches on hot baking sheet in a single layer and return to oven. Roast 5 minutes, or until ham shrinks and starts to brown. Remove pan from oven and drizzle with balsamic vinegar. Serve with goat cheese sauce for dipping.
