Almond Crusted Halibut

Ingredients

  • # 2 pounds Fresh halibut fillets, cut in 8 pieces
  • # 2 eggs
  • # 1/4 cup water
  • # 1/4 cup flour
  • # 1/2 teaspoon salt
  • # 1/4 teaspoon freshly ground black pepper
  • # 1 cup whole almonds
  • # 1 cup dry bread crumbs, preferably Japanese Panko
  • # 1/3-1/2 cup butter
  • # Lemon butter Sauce (recipe below)

Preparation

Step 1

1. Rinse halibut pieces and pat dry with paper towels. Set aside.
2. Whisk together the eggs, and water in a small bowl
3. Mix the flour with salt and pepper and place on a plate.
4. In food processor, process the almonds until they are finely chopped. Add the bread crumbs and process to mix. Place on a plate.
5. Dip the halibut pieces into the egg mixture, then roll in the flour.
6. When they are all coated, dip in the egg mixture and then coat with the almond crumb mixture, pressing the almonds into the halibut.
7. Melt several tablespoons of the butter in a large frying pan. Add the halibut pieces and brown on each side, adding more butter if necessary.
8. The halibut may be prepared 1 day ahead up to this point. Let the fish come to room temperature, then cover and refrigerate.
9. Place the frying pan with the fish in a 400° oven and bake until the halibut is just cooked through, 15-20 minutes. Add about 15 minutes cooking time if the fish has been refrigerated.
10. Serve with Lemon Butter Sauce.

Lemon Butter Sauce

* 2 eggs
* 2 tablespoons freshly squeezed lemon juice
* 1/4 teaspoon salt
* 1 cup butter, (no subs)

Directions:

1. Place the eggs, lemon juice, and salt in blender; blend until well mixed.
2. Bring the butter to a boil in the microwave.
3. Turn the blender on low
4. Slowly pour in the boiling butter
5. Transfer the mixture to a small serving bowl and let sit for a minute or two to thicken.
