Ingredients
- 1 1/2 - 2 lb pork roast
- 1 cup root beer
- 1 tsp garlic
- 1/2 onion, cut
- 3 cups root beer
- 1 small can enchilada sauce (red)
Preparation
Step 1
Put pork, root beer, garlic, and onion in crock pot. Cook low 6-8 hours or high 4-6. Remove from juices and shred meat. Meanwhile, put enchilada sauce and remaining 3 cups root beer in saucepan on the stove. Simmer for approx. 30 minutes, reducing to 50%. Mix half of sauce with shredded meat and put on buns for sandwiches. Save other half of sauce in a tupperware in the fridge for the next time you make the pork!
