Pumpkin Seed croquant

Ingredients

  • 2 tsp veg oil
  • 1 cup raw pepitas
  • 1/4 tsp cayenne pepper
  • 1/2 tsp salt
  • 2 cups sugar
  • 1/2 cup water

Preparation

Step 1

Prepare pan with veg spray, parchment, and more veg spray. Heat oil in a small skillet, add pepitas, cayenne, and salt. Cook, stirring, until browned, 6 minutes. Let cool. Makes enough for 4 brittles.
Heat sugar and water over high, stirring until dissolved. When it boils, let cook undisturbed until amber, about 8 minutes. Remove from heat, stir in 1/4 cup pepitas, and pour into baking pan. Let cool.
