Roasted Carrots with avocado

Ingredients

  • 1.5 pounds baby carrots
  • 3 tbsp olive oil
  • 1/2 tsp ground coriander
  • salt and pepper
  • orange juice
  • 1 avocado, diced

Preparation

Step 1

Toss carrots, olive oil, and coriander on a baking sheet, season with salt and pepper. Roast at 400, turning once, for 25-30 minutes. Top with some orange juice and diced avocado. Season with salt and pepper.
