Quick Fettuccine Alfredo

Ingredients

  • 8 oz fettuccine
  • 1 TBS butter
  • 1 Garlic Clove (Minced)
  • 3/4 c Nonfat Plain Greek Yogurt
  • 3/4 c Shredded Parmesan Cheese (Divided)
  • 1 TBS chopped fress parsley
  • 1/4 tsp Pepper
  • 1/4 tsp Salt
  • 1/8 tsp nutmeg

Preparation

Step 1

Cook 8 ounces fettuccine according to package directions. Drain, reserving 1/2 c of the cooking water. Melt 1 tablespoon butter in a large saucepan over medium heat. Add 1 mince garlic clove and cook for 1 minute. Stir in the pasta water and remove from heat. Whisk in 3/4 c nonfat plain Greek yogurt, 1/2 c shredded Parmesan cheese, 1 tablespoon chopped fresh parsley, 1/4 teaspoon each salt and pepper and 1/8 teaspoon nutmeg. Add the fettuccine and combine well. Serve topped with another 1/4 cup Parmesan.
