Rainbow Garlic Shrimp

Ingredients

  • 10 large garlic cloves
  • 1 green sweet pepper
  • 1 red sweet pepper
  • 1 yellow sweet pepper
  • 16 large shrimp, deveined and cooked
  • 6 tbsp. olive oil
  • 2 tsp. chili paste

Preparation

Step 1

1. Peel garlic cloves and slice thickly. Deseed and cut peppers into strips, 1/2 " wide. Halve shrimp lengthwise.

2. Heat oil in large frying pan. Saute peppers for 1 minute; add shrimp and cook until pink.

3. Add chili paste and garlic, and stir gently for 2 minutes. Serve with brown rice.
