Ingredients
- 2/3 cup quinoa
- 1 cup almonds sliced (or favourite nuts)
- 1 1/2 cups Kale and/or baby spinach
- 1 1/2 cup fresh blueberries
- 1 1/2 cups fresh raspberries
- 2 medium avocados ripe, peeled, pitted and diced
- 2/3 cup crumbled feta
- 1/4 cup olive oil
- 1/4 cup vegetable oil
- 1 tsp lime zest
- 3 1/2 tbsp freshly squeezed lime
- 1 tbsp agave nectar
- 1 tsp dijon mustard
- 1/4 tsp salt
- 2 tsp poppy seeds
Preparation
Step 1
For the salad, toss all ingredients together in a large salad bowl, reserving the feta cheese till just before serving.
In a blender, combine all dressing ingredients (starting at the olive oil down) except the poppy seeds. Blend until well combined. Pour into a container and stir in the poppy seeds. Store in refrigerator till just before serving.
Pour dressing over salad, toss and sprinkle feta over top. Serve immediately after adding dressing.
