Ingredients
- Salad:
- 2 medium fresh grapefruits
- 1 cup shrimp, cooked, shelled, and deveined
- 1/3 cup green pepper, seeded and diced
- 3/4 cup celery, diced
- 1/8 tsp salt
- lettuce leaves
- cooked whole shrimp & cherry tomatoes for garnish
- Dressing:
- 2 tb fresh orange juice
- 1/4 cup fresh grapefruit juice
- 1 1/2 tsp fresh lemon juice
- 1/4 tsp powdered mustard
- 1 1/2 tsp salad oil
- 1/8 tsp salt
- dash of fresh ground pepper
- 1/8 tsp paprika
Preparation
Step 1
Salad:
1) Cut the grapefruits in half and remove seeds. With a sharp knife, cut the grapefruit sections from the shells and remove the pulp. Reserve the shells. Cut grapefruit sections into pieces and combine with the shrimp, green pepper, celery and salt. Toss. Line the grapefruit shells with lettuce leaves and fill them with the grapefruit mixture. Garnish with the whole shrimp and tomato and cover with plastic wrap until ready to serve. Serve with fruit salad dressing below.
Dressing:
1) Combine the orange juice, grapefruit juice, lemon juice and mustard in a small bowl. Whisk in the salad oil and remaining ingredients until well blended. Chill. Drizzle over the grapefruit-shrimp salad just before serving.
