Jackie's Carrot Souffle

Ingredients

  • Topping:
  • 1 lb cooked carrots (fresh, peeled, and cooked)
  • 3 eggs
  • 1/3 cup sugar
  • 3 tbsp flour
  • 1 tsp vanilla
  • 1/4 lb butter (melted)
  • Dash nutmeg
  • 1/2 cup crushed corn flakes and walnuts
  • 3 tbsp brown sugar
  • 2 tsp soft butter

Preparation

Step 1

Place carrots and eggs in blender first (not cusinart)add remainder of ingredients. Place into 1 1/2 quart pan or souffle dish. Bake at 350 degrees 40 minutes

Topping:
Combine ingredients and spread on top.
Bake 5-10 minutes
