Ingredients
- 12 oz chicken, boiled & shredded
- 1/2 of a large avocado, diced
- 1/4 cup chopped celery
- 1/4 cup chopped cilantro
- 1/2 to 1 cup regular or light mayo
- Juice of 1/2 lime
- Salt & pepper to taste
Preparation
Step 1
Combine chicken, avocado, celery, & cilantro in a medium bowl. Add mayo, starting with ½ cup. Add more until it gets to the consistency you like. Add lime, salt, & pepper. Mix to combine. Serve on a bed of lettuce or make a sandwich with your favorite bread.
