Ingredients
- 4 each Italian sausage
- 2 teaspoons olive oil
- 2 each leeks, slice
- 1 clove garlic, crushed
- 1 large carrot, chopped
- 2 stalks celery, sliced
- 2 tablespoons flour
- 2 cubes beef stock
- 8 cups hot water
- 1/2 cup white wine
- 4 ounces shell pasta
- 1 can three bean mix (14oz)
Preparation
Step 1
CUT the sausages into small pieces. heat the oil in a large heavy pan and add the sausage pieces. Cook over medium heat for 5 minutes or until golden brown. Remove from pan and drain on paper towels.
ADD the leek, garlic, carrot and celery to the pan and cook for 3 minutes until soft. Add the flour and stir for a minute. Gradually stir in the combined water and beef cubes and the wine. Bring to a boil, reduce the heat and simmer for 10 minutes.
ADD the pasta and beans to the pan. Increase the heat and cook for 10 minutes, or until pasta is tender. Return the sausage to the pan and season with salt and pepper to taste.
