Pumpkin Enchilada Sauce

Ingredients

  • 1 can pumpkin puree, about 2 cups
  • 1 cup water
  • 1 cup vegetable or chicken broth
  • canned chipotles, plus some adobo sauce
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • dash cinnamon
  • salt and pepper

Preparation

Step 1

1. Combine all ingredients in a food processor and pulse until well mixed. Store in an airtight container int he refrigerator for up to 5 days.
