Veggie, Lentil, and chicken sausage soup

Ingredients

  • 1 pound raw lentils
  • 4 links chicken sausage
  • 1 Tbs. olive oil
  • 1 C onion chopped
  • 1/2 C celery chopped
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1/4 tsp. cayenne pepper
  • 1/2 tsp ground cumin
  • 1 can no salt added tomatoes
  • 2 qts low sodium chicken broth

Preparation

Step 1

heat olive oil in large soup pot over medium heat. add onions carrots, celery and salt. cook until onions are translucent. add lentils, tomatoes, chicken broth, black and cayenne peppers, and cumin, bring to a boil, reduce heat simmer until lentils are tender about 40 minutes.
remove casings from sausage links, heat 1Tbs. olive oil in skillet cook sausage to a golden brown, breaking up the meat while you cook it.
drain excess fat, add to finished soup, serve hot.
