Ingredients
- 2 6-oz portions of salmon fillet, pin bones removed.
- 1 English cucumber, peeled, seeded, and chopped
- 3 roma tomatoes, seeded and chopped
- 1/2 red onion, chopped
- 1/2 C cilantro, roughly chopped
- 1/4 C olive oil
- juice of 1 lime
- 1 tsp cumin
- 1 tsp dried dill weed
- 1 tsp salt
- 1/2 tsp freshly ground pepper
Preparation
Step 1
For the cucumber salsa:
Combine all ingredients in a glass or plastic bowl. Cover and chill for at least 30 minutes.
For the salmon:
Preheat grill or grill pan on stove top over medium-high heat.
Pat salmon fillets dry with a paper towel and season with salt and pepper.
Rub the salmon lightly with olive oil.
Grill fish for about 8-10 minutes total (4-5 minutes per side) or until flaky and cooked through.
Top with cucumber salsa and serve.
