Ingredients
- 1/2 c oil and vinegar dressing
- 1 T white wine vinegar
- 2 tsp. Dijon mustard
- 1/2 c sliced red onions
- 1 1/2 lbs. red potatoes
- 6 slices cooked bacon (crumbled)
- 1/2 c sliced scallions
- 1 T minced fresh oregano or cilantro
Preparation
Step 1
In large bowl combine dressing, vinegar, mustard and onions.
Meanwhile, boil potatoes 10 minutes or until tender. Let cool 10 minutes. Peel and slice. While potatoes are still warm, toss with vinegar dressing, bacon, scallions and herbs. Season to taste with salt and pepper.
