Ingredients
- 2 1/2 pounds asparagus (30 lg)
- 2 teaspoons olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground pepper
- 1/2 cup fresh Parmesan
- 2 lemons, cut in wedge
Preparation
Step 1
Preheat oven to 400 degrees. If thick, peel bottom half of each asparagus. Lay in single layer on a sheet pan and drizzle with olive oil. Sprinkle with salt and pepper. Roast for 15-20 minutes til tender. Sprinkle with Parmesan and return to oven for another minute. Serve with lemon wedges.
