Ingredients
- 1/4 cup slivered almonds
- 1/4 cup sugar
- 1/4 cup balsamic vinegar
- 1 clove garlic
- 1-2 OZ diced red onion
- 1 cup canola oil
- Salt and pepper
- Squeeze lemon juice
- 5 cups mixed greens
- 1/4 cup grated Parmesan
- 1/2 Fuiji or Gala apple slices
- 1/4 cup dried cranberries
Preparation
Step 1
Almonds: in non-stick skillet over medium heat, add slivered almonds and toast lightly. When they begin to change color add sugar and stir gently until sugar melted. Immediately remove from skillet. Place candied almonds on parchment paper in thin layer to cool. Once cooled, break into small pieces for salad topping
Vinaigrette: in a blender bowl combine vinegar, garlic, and onion and blend on high until evenly combined. Very slowly, while blender is running, add oil until dressing is creamy. Add salt and pepper and lemon juice to taste.
Salad/. In large bowl toss all ingredients with a light coating of vinaigrette to combine
