Tomato Pie

Ingredients

  • 4 tomatoes, peeled and sliced
  • 10 fresh basil leaves, chopped
  • 1/2 cup green onion, chopped
  • 1 9-inch prebaked deep dish pie shell
  • 1 cup mozzarella cheese, grated
  • 1 cup cheddar cheese, grated
  • 1 cup mayonnaise
  • salt and pepper

Preparation

Step 1

1. Preheat oven to 350.
2. Place tomatoes in colander in 1 layer, sprinkle with salt and allow to drain for 10 minutes.
3. Layer tomato slices, basil and onion in pie shell. Season with salt and pepper. Combine the grated cheeses and mayo, spread on top of tomatoes and bake for 30 minutes or until lightly browned.

Notes: substitute 2 cans petite diced tomatoes well drained for fresh tomates.

For prebaked crust bake 15 minutes at 400 w/foil and pie weights then remove foil and weights and continue to bake for 15 minutes.
