Ingredients
- 4 tablespoons unsalted butter
- 3 pounds russet potato, peeled and quartered
- 2 packages Boursin cheese (5 oz), room temp
- 1/2 cup milk
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 3 Tablespoons bread crumbs
- 3 tablespoons parmesan cheese, grated
Preparation
Step 1
1. Adjust oven rack to middle position and preheat to 350 degrees
2. Spray 8 inch square baking dish with Pam or coat with butter.
3. Place potatoes in large pot cover to 1 inch with cold water. Bring to boil and then simmer until tender (about 15 minutes). Drain potatoes and wipe pot dry. Return potatoes to pot.
4. Mash potatoes with cheese, milk and 3 tablespoons of the butter until smooth. Stir in salt and pepper. Spoon mixture into baking dish.
5. Melt remaining tablespoon of butter and toss with bread crumbs and parmesan. Sprinkle over top.
6. Bake until casserole is very hot and browned on top (about 45 minutes). Cool 10 minutes and serve.
