Ingredients
- 1 pound Italian style green beans
- 1 medium yellow onion, chopped fine
- 3 medium tomatoes, chopped
- salt
- pepper
Preparation
Step 1
1. In large deep skillet heat olive oil. Add onion and saute for about 5 minutes.
2. Add green beans, cover skillet and cook for about 15 minutes.
3. Add two of the tomatoes to pan, cover and cook another 15-20 minutes until tomatoes have melted into a sauce.
4. Add salt and pepper if needed.
5. Add another tomato or two if needed and continue to cook.
6. Cook until beans are very tender. You may also add additional olive oil for flavoring.
7. Optionally add some crumbled feta on top when serving.
