Ingredients
- 1 large sweet potato
- Pinch of sea salt
- Several turns of fresh ground pepper
- Few shakes of garlic powder
- A couple of dashes of onion powder
- A sprinkle of dried herbs (Parisian Bonnes Herbs)(optional)
- 2 tbs of fat of choice
Preparation
Step 1
Peel and cut sweet potato lengthwise so it fits in food processor.
Shred the yams using the shredder attachment on processor.
Transfer shredded potatoes to a large bowl and toss with spices.
Heat the fat in a large skillet on medium high heat.
Toss everything in the fat and sauté for a minute then pop the lid on and cook for a couple more minutes.
The hash is ready when it's tender and there are crunchy brown bits.
Top with fried eggs.
