Sweet Potato Hash

Ingredients

  • 1 large sweet potato
  • Pinch of sea salt
  • Several turns of fresh ground pepper
  • Few shakes of garlic powder
  • A couple of dashes of onion powder
  • A sprinkle of dried herbs (Parisian Bonnes Herbs)(optional)
  • 2 tbs of fat of choice

Preparation

Step 1

Peel and cut sweet potato lengthwise so it fits in food processor.
Shred the yams using the shredder attachment on processor.
Transfer shredded potatoes to a large bowl and toss with spices.
Heat the fat in a large skillet on medium high heat.
Toss everything in the fat and sauté for a minute then pop the lid on and cook for a couple more minutes.
The hash is ready when it's tender and there are crunchy brown bits.
Top with fried eggs.
