Ingredients
- 1 cup apple juice
- 1/2 cup water
- 1/4 tsp. salt (optional)
- 1/8 tsp. ground cinnamon
- 1 cup frozen peas, thawed
- 3/4 cup whole wheat couscous
- 1/4 cup golden raisins or cranberries
- 1/3 cup toasted pecans, coarsely chopped
Preparation
Step 1
1. Combine apple juice, water, salt, and cinnamon in a medium saucepan and bring to a boil.
2. Remove from heat and stir in peas, couscous, and raisins.
3. Cover and let stand for 5 minutes
4. Fluff the couscous with a fork, stir in the pecans and serve.
