Stir-Fried Beef with Broccoli & Peppers

Healthy version of a Chinese restaurant favorite.

Ingredients
- 1 lb flank steak, trimmed
- 2 tbsp soy sauce
- 1 tsp minced garlic
- 1/2 tsp black pepper
- 3 1/2 tbsp water, divided
- 2 tbsp oyster sauce
- 1/4 tsp crushed red pepper
- 1 large head broccoli
- 1 large red bell pepper, halved, seeded and cut into strips.
- 4 cups hot cooked rice
Preparation
Step 1
Cut steak into strips across the grain. Combine with soy sauce, garlic and black pepper and toss well. Cover and refrigerate 30 minutes.
Combine 1 1/2 tbsp water, oyster sauce and crushed red pepper in a small bowl; set aside.
Cut broccoli into florets.
Heat wok to medium high heat and spray with cooking spray. Add beef mixture and cook 3 minutes or until brown, stirring constantly. Remove from heat and transfer to a bowl.
Reheat wok and add broccoli; cook 2 minutes, stirring frequently. Add remaining 2 tbsp water and cook an additional 1 minute. Add bell pepper and cook 1 more minute, with lid on wok (if available).
Return beef to pan. Stir in the oyster sauce mixture; cook until thoroughly heated. Serve over rice.
