Ingredients
- 1 diced onion
- 2 cups red or brown lentils
- 2 cups diced butternut squash
- 14 oz. can coconut milk
- 15 oz. can diced tomatoes
- 1 T curry powder
- 2 t salt
- 8 cups water (add before cooking)

Step 1
Slow Cooker: 6-8 hours on LOW
Serve with: hot, cooked rice, flatbread, raita
