Ingredients

  • 1 diced onion
  • 2 cups red or brown lentils
  • 2 cups diced butternut squash
  • 14 oz. can coconut milk
  • 15 oz. can diced tomatoes
  • 1 T curry powder
  • 2 t salt
  • 8 cups water (add before cooking)

Preparation

Step 1

Slow Cooker: 6-8 hours on LOW
Serve with: hot, cooked rice, flatbread, raita
