Bay and Lemon Roasted Potatoes

Ingredients

  • 5 T Olive Oil
  • 1/4 C fresh lemon juice
  • 4 L garlic cloves, peeled
  • 4 bay leaves
  • 2 tsp grated lemon peel
  • 5 L russet potatoes unpeeled, cut into 1" pieces.

Preparation

Step 1

Preheat oven to 400.Combine olive oil, lemon juice, garlic cloves, bay leaves and lemon peel in blender. Blend until bay leaves are finely minced.
Arrange potatoes in 13x9x2 inch roasting pan. Pour oil mixture over; toss to blend, bake until potatoes are tender, stirring every 15 minutes. Cook for about 1 hour.
