Cream Cheese Lemon Cake

Ingredients

  • 125 g butter
  • 125 g cream cheese, chopped
  • 3 tsp grated lemon rind
  • 1 cup (220g) castor sugar (superfine sugar)
  • 2 eggs
  • 3/4 cup (110g) self-raising flour
  • 1/2 cup (75g) plain flour (all purpose)

Preparation

Step 1

Grease 21cm baba cake pan (bundt). Combine all ingredients in medium bowl of electric mixer, beat on low speed until all ingredients are combined. Then, beat on medium speed until mixture is smooth and changed in colour. Spoon and spread mixture into prepared pan. Bake in moderately slow oven (160C/325F) about 55 minutes. Stand for a few minutes before turning onto wire rack to cool.

Dust cold cake with sifted icing sugar (confectioners/powdered sugar).
