Wholemeal Bran Banana Cake
Metric measurements. You'll need about 2 medium over-ripe bananas.

Ingredients
- 125 g butter
- 1 cup (200g) firmly packed brown sugar
- 3 eggs
- 1 1/2 cups (240g) wholemeal self-raising flour
- 1/4 cup (20g) unprocessed bran
- 1/3 cup (30g) coconut
- 2/3 cup mashed banana
- 1/2 cup (125ml) milk
Preparation
Step 1
Grease 15cm x 25cm loaf pain, cover base with baking paper.
Combine all ingredients in medium bowl of electric mixer, beat on low speed until ingredients are combined. Then, beat on medium speed until mixture has changed in colour. Spread mixture into prepared pan. Bake in moderate oven (180C/350F) about 1 hour 10 minutes. Turn onto wire to cool.
