Chopped Tomato Salad

Ingredients

  • 2 lbs assorted small toms, halved and quartered
  • 1 TBSP EVOO
  • 1/4 cup mint leaves, roughly chopped
  • 1 TBSP fresh oregano or 1 tsp dried
  • zest of 1 lemon and juice of 1/2 lemon
  • 1/2 tsp salt
  • black pepper, to taste
  • 1/2 cup pitted kalamata loves, quartered
  • 3 oz feta, crumbled

Preparation

Step 1

Combine and toss to coat. Serve within 1 hr.
