Roasted Sweet Potato Salad With Citrus Vinaigrette

Ingredients

  • 1 Lb medium sweet potatoes, peeled and cut into wedges
  • 1 medium sweet onion cut into wedges
  • 1 Tbsp olive oil
  • 1 garlic clove
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 bag of mixed greens

Preparation

Step 1

Preheat oven to 400.
Toss together the sweet potatoes and the next 5 ingredients in a large bowl. Place the sweet potato mixture on a baking sheet.
Bake at 400 degrees for 25 minutes, stir once and bake 15 minutes more or until the potatoes begin to caramelize.
Spoon potato mixture over mixed greens and drizzle with citrus vinaigrette.
