Ingredients
- 2 1/2 lbs medium potatoes, peeled
- 4 cups chicken stock
- 1 garlic clove
- 6 oz sliced bacon, cut into 1/2 inch pieces
- 1/2 medium onion, thinly sliced.
Preparation
Step 1
Bring potatoes, stock and salt to a boil in a medium saucepan. Reduce heat, simmer until potatoes are tender, 12-14 minutes. Transfer to a bowl using a slotted spoon. Cook bacon in large skillet, about 4 minutes. Add onion, reduce heat to medium. Cook, stirring, 7-9 minutes.
Add potatoes to skillet, pour cooking liquid to come halfway up sides. Raise heat, simmer, turning often, and season with salt and pepper. Cook until liquid has reduced, 15 minutes.
