Ingredients
- 1/4 cup extra virgin olive oil
- 1 1/2 pounds seedless watermelon, ring removed and cut into 1 inch cubes
- 20 pitted kalamata olives, halved
- 1/4 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh herbs, chopped (oregano, mint, or parsley)
- 1 jalapeno, seeded and thinly sliced (optional)
- Harissa or other hot sauce (optional)
Preparation
Step 1
Combine all ingredients in a large bowl. Toss together and serve.
