Garlic Broiled Shrimp

Ingredients

  • 1 lb fresh or frozen shrimp, peeled and deveined
  • 2 tbs olive oil
  • 2 cloves garlic, minced
  • 2 tbs sherry
  • salt & pepper to taste
  • 2 medium tomatoes, halved

Preparation

Step 1

Combine olive oil, garlic, sherry, salt and pepper.

Place shrimp in a ziploc bag and add marinade. Marinate for 2 to 4 hours.

Drain shrimp, reserving marinade. Arrange shrimp on an unheated rack of broiler pan. Place tomatoes, cut side up, next to shrimp. Brush shrimp and tomatoes with marinade. Broil 4 to 6" from heat about 5 minutes or until shrimp turn opaque, turning once.

Discard remaining marinade.
